Google conan exiles map, look for the one thats been divided into grid coordinates. Iron ore and coal nodes are at coordinates F4. Its a ♥♥♥♥ fight to get there though, you need to be with a group or high levelled to survive the trip. Safe enough around the nodes though.

if you find black stone that looks like rubble from a pillar or something you Cannot harvest that. There is a bunch of iron and coal in the center of the map and more if you go furthur north. iron rocks are small roundish silver rocks, coal rock are samll roundish black rocks.
Fairly sure once you get enough iron from mining regular stone and unlock the iron pick you can then mine the dark black rocks for iron with the iron pick but that is just a gamer hypothesis, not gotten to the point where I can test it.
